A5 strip loin
Rich enough that a few slices are plenty. Seared hard, rested, and served to share.

Japanese beef is scored for its marbling, from BMS 1 to 12. A5 means the top yield and the top quality band: marbling scores 8 to 12. This is the fat that melts into the meat as it cooks.

F1 wagyu cross
Half wagyu, half something sturdier. Less melt, more beef: the one to pick when you want a proper steak to work through.
Before you order
Slide to see what each doneness looks like inside, and what it does to marbled beef.

On the side
Whipped potatoes enriched with rendered wagyu fat. People come back for the steak and talk about this.
